Impulsive Culinarian’s Vegetarian Make-Ahead Gluten Free & Dairy Free Gravy Recipe
(Serves 6 to 8)
Ingredients
- 4 cups Vegetable Broth
- 1/4 cup Dairy Free Margarine
- 4 medium Yellow Onions, chopped
- 4 cloves Garlic, chopped
- 1/3 cup Golden Raisins
- 1 cup Dairy Free Milk
- 1/4 cup Olive Oil
- 1/3 cup Corn Flour
- 1 cup White Wine
- 1 1/2 tsp Kosher Salt
- 1/2 tsp Freshly Ground Black Pepper
Instructions
- In a medium sauce pan over high heat, bring vegetable broth to a gentle boil
- Reduce heat to medium-high and reduce broth by half (around 20 minutes)
- In a non-stick skillet, melt margarine over low heat
- Peel and chop onions
- Caramelize onions in the skillet (around 45 minutes)
- Chop garlic
- When onions are almost fully caramelized (around 10 minutes before the end of cooking) add chopped garlic and golden raisins to the skillet
- Remove onions from the heat, add milk and stir together to cool
- Transfer onion & milk mixture to a blender and puree the mixture until smooth
- Pass the onion mixture through a fine mesh sieve into a large bowl, and set aside
- Heat a large sauce pan over medium-high heat
- Add olive oil and corn flour to the sauce pan, whisking vigorously for around 1 minute
- As soon as the roux begins to get some colour remove from heat
- Slowly add in the white wine and whisk together until smooth
- Return sauce pan to the heat and slowly whisk in the reduced broth
- Bring the mixture to a boil, then reduce heat to medium
- Using a large spoon, add onion puree to the broth one spoonful at a time, whisking after each addition
- When the gravy reaches desired consistency, stop adding onion puree
- Add salt & pepper
- Reduce heat to low and simmer uncovered for 30 minutes
- Refrigerate if desired
- Simmer covered over low heat until ready to serve
