Impulsive Culinarian’s Indian Baighan Bharta Recipe
Ingredients
- 1 large Eggplant, peeled, 1/2″ slice
- 1/4 cup Dairy Free Margarine
- 3 medium Yellow Onions
- 1 tbsp Olive Oil
- 1 tbsp Cumin Seeds
- 4 Garlic Cloves, thinly sliced
- 2 tbsp Fresh Ginger, finely chopped
- 1 tbsp Garam Masala
- 2 large Tomatoes, peeled, seeded, chopped
- 1/2 cup White Wine
- 1/2 tsp Kosher Salt
- 2 tbsp Fresh Coriander, chopped
Instructions
- Preheat oven to 425°
- Place sliced eggplant on a parchment-lined baking sheet
- Brush eggplant generously with olive oil, season with fine salt & freshly ground black pepper, repeat on both sides
- Roast eggplant for 20 minutes on first side, then flip and continue roasting for another 15 minutes until golden on both sides
- Warm a cast-iron skillet over low heat
- Add margarine and chopped onions to skillet, let caramelize over low heat for around 45 minutes to an hour as necessary
- Once eggplant has finished roasting, let them cool, then chop into 1/4″ dice and set aside
- Remove caramelized onions from skillet and set aside
- Return skillet to stove top and increase heat to medium
- Add 1 tbsp of olive oil to skillet and saute cumin seeds for around 30 seconds
- Add garlic & ginger to skillet and saute for another 30 seconds, stirring constantly
- Add garam masala to skillet and saute for another 30 seconds, stirring constantly
- Add tomatoes to skillet and cook for another minute stirring occasionally
- Add white wine to skillet and let simmer for around 2 minutes to reduce
- Add eggplant, caramelized onions, salt, pepper & coriander to skillet
- Reduce heat to low, gently combine all ingredients together and let simmer for at least 15 minutes

Eggplant can be a tough sell for picky eaters, but true fans of authentic Indian cuisine will most certainly attest to how incredible this magic dish can be when prepared correctly.
