Impulsive Culinarian’s Gluten Free Herb-Crusted Salmon With Roasted Shallots & Capers Recipe
Ingredients
- 3 pound Salmon Fillet, skin-on
- Juice of 1 Lemon
- Kosher Salt & Freshly Ground Black Pepper
- 1/2 cup Fresh Gluten Free Bread Crumbs
- 1/2 cup Fresh Parsley (3 tbsp chopped)
- 1 bunch of Fresh Chives (3 tbsp chopped)
- 3 tbsp Capers (1 jar), drained
- 9 or 10 Shallots, peeled & thinly sliced
Instructions
- Preheat oven to 450°
- Line an 11″ x 17″ baking sheet with parchment paper
- Rinse & pat dry the salmon fillet, trim off a bit of the tail segment as needed so it fits in the baking dish
- Lay the fillet skin side down with thickest side along the edge of your baking sheet
- Brush the salmon with lemon juice so it is completely coated
- Season generously with kosher salt & freshly ground black pepper
- Put bread crumbs, parsley and chives in a food processor and pulse until finely chopped and thoroughly combined
- Cover the entire salmon with the herb & breadcrumb mixture
- Place sliced shallots and capers in large mixing bowl and season with a tbsp of olive oil and some salt & pepper
- Spread the onions & capers evenly on the remaining surface of the baking sheet
- Bake with salmon towards the back of the oven for 20 minutes
- Using a large spatula, carefully separate the salmon from its skin
- Use two large spatulas at each end of the fillet to carefully transfer the fish to a serving platter
- Surround the salmon with the roasted shallots & capers
- Garnish with fresh chopped chives if desired and serve
