Impulsive Culinarian’s Vegetarian Minestrone Soup Recipe
Ingredients
- 3 tbsp Olive Oil
- 10 Shallots, thinly sliced
- 3 Celery Stalks, thinly sliced
- 2 Carrots, peeled & thinly sliced
- 5 Garlic Cloves, thinly sliced
- 1 large Zucchini, finely chopped
- 1 cup White Wine
- 6 cups Vegetable Broth
- 1 cup Gluten Free Pasta
- 1 can White Cannellini Beans, drained & rinsed
- 1 can Red Kidney Beans, drained & rinsed
- 1 large can Diced Tomatoes
- 4 cups Baby Spinach
- 2 tbsp Fresh Oregano, finely chopped
- 1 tbsp Fresh Basil, finely chopped
- 1 tbsp Kosher Salt
- Freshly Ground Black Pepper to taste
Instructions
- Warm broth in a medium sized sauce, then cover and let simmer over low heat pan until needed
- Warm a large stock pot over medium heat
- Add olive oil to the stock pot
- Saute shallots, celery & carrots in the stock pot until softened, stirring occasionally for around 8 or 9 minutes
- Add garlic & zucchini to the mirepoix and saute for an additional 2 to 3 minutes, stirring occasionally
- Add white wine and let reduce for 2 minutes
- Add warm vegetable broth to the stock pot and bring to a gentle boil
- Add pasta and all remaining ingredients to the broth and bring to a gentle boil, stirring occasionally
- Once the soup comes to a boil, reduce heat to medium-low, cover partially and simmer until pasta is cooked
- Correct seasonings if necessary and serve immediately
