
Our family has a few challenging dietary restrictions, which can make sitting together at the dinner table a difficult task.

When meat is on the menu, I always try to make a pescatarian or vegetarian option that doesn’t seem thrown together because everyone at the table should feel important, even excited about what they are going to eat too!

One recent vegetarian option that crossed our plates was this scrumptious stuffed portobello main, so simple yet so delicious. I love it when the ‘option’ is even better than our main course: mission accomplished.
