Dairy Free “Buttered” Baked Cod With Sauteed Scallions
Fresh off the heels of a successful sole meuniere on Tuesday, my craving for buttery fish was somehow just not completely satisfied. Opting to bake the lightly seasoned cod however, it seemed right to drizzle just a bit of melted soy & dairy free margarine on top along with some wilted scallions for colour; yummy.
Roasted Pepper Risotto
I’m not exactly sure where the motivation came from, but I had an undeniable urge for some traditional risotto enhanced by the sweet and savoury flavour of roasted orange peppers. The end result was creamy, delicious, and exactly what I had hoped for. Tack on a bit of classic creamy coleslaw snd mission complete.
