Leeks Are Lovely …
Experimenting with vegetables in the kitchen is a necessary pass-time for any culinarian, we’re always on the lookout for a great side dish that strays from ordinary.
Leeks are a member of the same family as onions and garlic, and could easily be likened to a large scallion but much milder in flavour. This makes for some delicious combinations, namely flavouring broths, sauteed with other more sturdy vegetables for texture, or as the main ingredient for leek & potato or cock-a-leekie soup.

Leek Paninis Are Even Better
Today, while perusing for a snack at one of my favourite lunch spots, I came across a wonderous find. It didn’t appear to be that special at first glance but a short discussion and an interac transaction later, I was the thankful participant in my very first leek panini experience.
Leeks carefully sauteed with onions, spinach and mild herbs, all loaded up in a fresh panini wrap with lettuce, some grated carrot, and toasted to perfection … pure deliciousness. It was the best leek dish I’ve ever had, and I could eat these every day.
Now, I’m very seriously motivated to replicate this at home … I’ll keep you posted on my progress, maybe even leek the recipe to you as well.
